With my daughter’s latest obsession with popsicles, I decided that some DIY Popsicles were in order for this summer to eliminate the excess sugars and artificial flavors that come with the store bought ones. I found popsicle molds at Home Goods in a variety of styles and shapes. With the Farmer’s Markets up and running for the summer, fresh strawberries were the way to go. They also happen to be Malia’s favorite fruit.
Using my Nutribullet, I blend one basket of strawberries with about half a cup of low fat vanilla yogurt. I prefer the popsicles to be heavy on the fruit side. You could definitely add more yogurt for a smoother, creamier texture. If the strawberries are on the tart side, I add some organic honey to sweeten it. Add it to your taste preference. Fill the molds and freeze! Simple as that.
We love ending our day on the patio, sharing a popsicle. Or as she calls it a “Po-co-lo”. It’s a fun and easy way to get healthy snacks without all the artificial flavoring. If she asks for it for breakfast? I don’t feel so bad. 🙂
