We headed to Casini Ranch, along the Russian River in Northern California, for a day of outdoor fun with the family. Since we were arriving at lunch, I wanted something easy that had minimal prep and provided a filling meal for the family without interrupting a full day of activity too much. Loaded potatoes were perfect!
The best part of this meal is that it could be prepped before hand. I threw my potatoes in the instant pot to cook, wrapped them in foil and warmed them up on the grill when we were ready to eat to heat them through.
- Large Russet Potatoes (or potato of your choice)
- Toppings of your choice (butter, sour cream, broccoli, bacon, chives, etc)
Baked Potato Instant Pot
- 1 cup of water
- 4 6-8 oz russet potatoes in 6 qt instant pot on High for 15 min
- Salt (optional)
- Natural vent for 10 minutes
I like to poke my potatoes with a fork prior to cooking and sprinkle with salt prior to cooking.
