Thank Goodness it’s Friday! That’s the first thing I’m thankful for today. I don’t know about you but this was a very long week. Whew! Time to shake it off like Taylor Swift and get ready for the weekend and start enjoying the Fall weather. But before that — here are some other things I’m thankful for.
TGIF I get to sleep in tomorrow morning. I get to wake up to my daughter asking me, “Is there school today or can we be together?” Awwwwwwww! I always leave for work before she wakes up so when she wakes up to me at home, she thinks it’s a weekend. Oh…and Dateline NBC is on tonight too. 🙂
Annual Department Potlucks I work in the IT department at work and every Fall we have a department potluck. OMG – the variety of ethnic cuisine is just amazing. I love exploring new dishes, discovering new flavors and some times walking away with a new recipe. Here’s my contribution to this years spread — Fried Plantains with a Chocolate-Nutella dipping sauce.
Fitness Progress Reports I’m been working on getting healthier and stronger after a couple of health scares. I’ve made smarter choices in what I eat. I’ve focused on moving more and lounging less (unless it’s poolside in Maui). And I’m letting my stresses go with long walks or breathing exercises. It’s been a wonderful feeling and I’m starting to see results of the change. 4 weeks in, I’ve lost 8 pounds. My minutes per mile is getting faster and my appetite is under control. Slow but steady! I’m going to win this race.
Fall Weather After the insanely hot weather we’ve had this Summer, the drought and wildfires throughout California, it’s REALLY nice to usher in some cooler weather. I love waking up to cooler mornings, not using the air conditioner so much and seeing intense clouds in the sky. They do make for some dramatic sunsets. Plus I much prefer sweaters and boots.
Creativity I love finding time to be creative and inspired. It helps me see something beautiful in the mundane. Working M-F in a 10×10 cubicle, jabbing away at a keyboard doesn’t provide me with much inspiration (unless I’m sneaking in a blog post…ooops!). I love being able to pick up my camera and try to capture a vision I have in my head or freeze a special moment in my life. I’m thankful every day for this outlet.
I know it’s a little early for Thanksgiving, but What are you thankful for today?
I feel like alone on my island of no-exercise. I’ve struggled to be healthier, but I’m happy to see other people succeeding with it. Cooler weather is definitely a blessing for me because summer heat is not my friend.
Awwww, it’s hard some days to make up my mind to do it. But I’ve never regretted the choice to move and often regret the choice not too. 🙂

We do potlucks every Sept and Holiday season at work and I love your idea. Friday’s are my favorite day also.

OK, explain to me what is happening with the food in that picture. It’s dipped in chocolate obviously, so I’m probably going to want to try some! It looks like banana.
CJ – it’s caramelized plantains with a nutella-chocolate sauce. I rolled the plantains in brown sugar and fried them in oil to caramelize. I melted the nutella and chocolate together to make a warm sauce. Delicious!
